After a bit of experimentation I've cured my two problems:
1. No SLI support
2. All shadows are solid black (this is horrible)
Instructions:
1. Use the 344.65 drivers (not the latest ones)
2. Get hold of nVidia inspector and modify the Far Cry 4 profile:
a) SLI compatibility bits (dx1x) set to 0x081902F5
b) SLI compatibility bits set to 0x02402C05
c) Maximum Pre-rendered frames set to 1.
Explanation - the first two get SLI working properly, the last stops the textures flickering.

Hearing that UBI wants us to unplug USB devices, turn off SLI and who knows what's next, seems to me to be UBI trying, desperately, to blame anybody but themselves for all of the Far Cry 4 problems. Perhaps if they had performed, any, testing before release, these problems would have been dealt with.
These keyboard, mouse and video problems surfaced immediately, in my case within 90 seconds of starting the game I discovered the keyboard/mouse issue. 90 seconds.
UBI simply did not test this game.
I also like to add that it is interesting to see the NVidia logo flash on my screen during startup, yet NVidia SLI is not supported???
