Is there a way to get Trials frontier on a big screen without high latency. I was thinking with an adapter such as this for example:

Has anybody got experience of experimenting with this or anything similar?

I think that's the only way.
I tried airplay, and WIFI is just not stable enough, even 0.1s latency can ruin the run.
however i've never tried the cable thing.

I've used that with my ipad to drive video on a projector at work so I could give a presentation. I did bring up a game afterward (everyone wanted me too, and they also thought it was cool when the projector auto-adjusted when I turned the ipad 90 degrees from portrait to landscape, etc). However, the game I did it for was not as graphically intensive as Frontier so... not 100% sure.
