Dont know the course but odds are.... right before it is an elevator/platform? Get on that, and as it accelerates up, hit the gas and throw yourself off the platform. So the platform launches you vertically, and bike provides forward horizontal momentum. You will eventually get the required angle to hit the candy.

If I am wrong, you'll have to post a screenshot, or at least provide the name of the track.

As above. You need to go pretty bloody fast though.

This will sound like a stupid question but do you know how to ollie? Just driving off the edge isn't enough. You need to lean back before take off and lean forwards at the point you want to take off. That will give you some extra pop.
