you need to set up a physics joint and then use a Hit Trigger, keep target 1 options and under target 2 unckeck all and from object instance select the ramp, point 'on hit' to a physics event that turns physics on for the ramp glue group.
i believe in one of the example tracks there is a pipe that drops when the bike hits it, it should be along the lines of what your looking for, not really checked this out but it should point you in the right direction.
