Wow, that's quite a climb for that spot on The Pendulum... I've done that The Stacks spot by accident a few times... sadly you can't go over the rock, there's a death zone up there for some reason.
I've got a couple more now:
On Crane Yard, get huge air at the ramp that has its landing platform slide into place under you. Then keep your balance, there's not much space up there!
I don't remember the name of this map, but it's a tricky drop off that trampoline to catch your rear wheel and pull yourself back.

I can't really prove it as I've done some of those in the past and don't want to waste fuel doing it again, but I have gotten on top of the wheel in lumber yard and the barrels in the stacks previously. Best part is that I wasn't even trying, it just kinda happened (the stacks was during a cube hunt after learning one was in there)
A favorite of mine is "Leaned the Wrong Way" in Flaming Freeway (At Beginning).
But if you drive too far back, you'll crash and have this crazy thing happen.

I can jump there with my level 4 phantom, but I don't have the grip to climb up.
