A wild and uneducated guess would be, you'd be better off spending time on making a good driving line and visual decorations and not worrying about sound so much.
Not hating, just saying.

Hey,
Long story short, I don't think there is a way to make the bike 'eco'. Curunir is right, you could waste hours/days trying to figure this out...
I'll take a stab at it anyways.....There isn't a good replica Bike sound in the sound library. You could have a code loop that watches the gas /right trigger button (There is filter(?) that returns how far down the trigger is pressed (0-7 or something), you would then play the sound you chose and increase the pitch with the amount the trigger is pressed. maybe keeping the sound volume down and at a certain pitch would make a semi believable echo? The only problem is, the bike's engine sound can change depending on what surface your driving on(\etc...), so this may not be a good method.
This might be a little 'out-there', but I gues you could watch the gas button again, but instead of playing a sound, you would set the Bike's engine power to zero breifly, and replicate where the gas button last was, the return power to normal. This would probably only work in scenes that the bike wasn't moving, or perhaps jumping...but you'll piss the hardcore riders off because they use throttled for jumping/spinning.
Good luck,
