Unfortunately you can't. You can only play local multiplayer with more then one person on one xbox. The reason is the different rules for online and offline multiplayer. Offline multiplayer the rider resets when you fall off the screen but on online mutiplayer the camera will follow you. So if you had 2 people on one xbox the rider would reset but for the rider on a different xbox it wouldn't so it wouldn't really be fair at all. I hope that makes sense. It's kinda hard to explain.
