How do I switch lean from left and right to up and down?

You cant. Lean is left and right no matter what.

I just did that today on a track while I was messing around. I put the camera behind the rider and tried a chase-cam set up.
I'm trying to think of how I did it... but from memory is a hard way for me to re-program.
It's getting late here and I gotta get to bed.
If no one has answered this tomorrow I'll try to reassemble this and take a pic to walk you through it.
