I think the weekend spa break is a good idea. You'll be able to chill with it as well -2 birds, 1 stone etc. As cheesy as it is, simply you spending time with her is probably what she wants most. If not what about skydiving or some other crazy stunt? Or an IOU for anything she wants in the bedroom.

I know I got my wife and I a nice suite for a night with some type of "romance" package, and it came with free dinner, chocolate covered strawberries, a bottle of champaign.. it was nice!

@AJ - Just meant that he can get something out of this at the same time as being an thoughtful boyfriend. I'd be happy getting my missus a spa package cos I'd quite like to chill in a spa for a weekend too!

I don't think its just marriage haha, I think it all depends on the person. My wife is into crafts too, so I'm sure she'd love a wooden rack of sorts, or jewelry since she always says here favorite color is sparkles, or a weekend getaway, or a dinner I made her at home.
