720p is native of Trials I believe. 1080i is not as good for gaming as 720p.
I haven't used the VGA cable at all so I can't comment on that.
The 360's upscaler is pretty good so 1080p is fine too if your TV can support it.

If you have an Xbox 360 with the HDMI connector and a Full HD TV set, I recommend setting your Xbox 360 output to 1080p, since the Xbox scaler does not cause extra latency (and it has very good quality). If you set your Xbox to 720p on a 1080p television, the TV set has to scale the image, and this causes at least one frame extra lag to the image (two frames on some TV sets).

If you don't have an HDMI cable and a Full HD television set, I suggest setting your Xbox 360 to 720p output, since it's the Trials HD native resolution (and the native resolution of majority of the Xbox 360 games). If you choose some other resolution than 720p or your TV native resolution, both the Xbox 360 and the TV set will scale the image, and this causes some extra blurriness (720p -> 1280x1024 -> 1080p).

I would not use 1080i, unless your TV set is and older native 1080i model that does not support 1080p/720p.
