I can record for you if you want.......http://www.youtube.com/user/TrialsHDCustoms
Don't think anything records with HDMI cable. I use Hauppauge 1212 HD PVR. Most external HD recorders (any for that matter) use component, and composite cables.

Re: put my track on youtube.
Unfortunately EatMeet, that's not quite how it works. However, There are many ways of recording what you see on your TV right to your Computer.
One way to do this is by using a PVR (Personal Video Recorder). These devices have an input for left and right audio, composite video, and S-video. In most cases they will have an output as well which makes things easier. From the PVR there is usually a USB cable that sends the video to your computers hard drive. A good starter PVR is the Dazzle Platinum. It only has inputs so you must use the audio and video outputs on your tv or use splitters in order to get the signal to the PVR. I'm pretty sure the Dazzle only records up to 480i so if you are seeking HD then I don't recommend it. It should cost you anywhere from $60-$90.
As Jarr3t88 said, the Hauppauge HD PVR is an excellent choice for recording in HD. The Hauppauge can record in 720p and 1080i using the component cables from the Xbox (The red, green, and blue ones). It also includes composite and S-video ports for lower quality video. The Hauppauge, while producing much higher quality video, is also more expensive at around $200.
Another way of recording is by installing a capture card. To be honest, I don't know too much about them so you might have to do some research to find out all the details. Sorry about this...
Taking the raw recorded video and getting it on YouTube is a whole other process which I have not done yet. If you have any more questions I'll do my best to answer them. Also, doing a quick search on YouTube will tell you all you need to know about PVR's and how to record from your Xbox. Good Luck.

Re: put my track on youtube.
Most digital cameras can record short videos (1-2 minutes).
I ride my track and get a run I like.
Then I put a chair in front of the TV and put the digital camera on it to keep it stable.
Then I replay the track and record a short video with the camera.
Grab the video off the camera and upload to youtube.
Would be nice to have HD video (hint hint Jarr3tt88
) but this works ok too
