I know there's free rotation and limited rotation but hard/soft? Did I miss something too?

I've been wondering too, they are right below free and limited rotation in the menu

It's not so much a hinge, but a point to point connection.
You can make a bridge out of them but if you use planks then you will need to use 2 per connection, one for each side.

If you just join it in the middle then the planks can twist.

Soft = More give
Hard = Less give (like a hinge)
