Each track has a set of allowed bikes. You can select any bike that's allowed in the track. Different bikes have different strong and weak points, and require pretty different play style. In some tracks it's possible to get the absolutely best time with a certain bike, but it's much harder than getting a very good time with another. The first two bikes are only for beginners (to make the difficulty curve much easier), and are only allowed in beginner and easy tracks. Yes, you can upload (share) your tracks (to a certain limit) and all your friends can browse your shared tracks and download them, even when you are not online yourself. Naturally you can also save your tracks (and the tracks you downloaded from your friends) to the Xbox hard drive and any of your memory units.
