What frame rate and format do you guys record in for sites like you-tube? And what do you use to capture the game? Run in window mode or full screen? I am new to the video stuff so I would appreciate some tips if ya got any.

When I've been recording for Youtube I use fraps and just record in fullscreen mode. Then I edit it all in Windows Movie Maker.
When I made my Monday Trick Time (TFC Trick Movie), I recorded it too with Fraps, but with a better computer and a bigger resolution so I could then edit out all the text and info. In this kind of projects I use Adobe Premiere Pro which I think is the best editing tool.
Framrates I use when I record is 30 and file type is avi. The ended movie is 25 and also avi but convertet.
