YSFE makes it really easy for you to figure out size and placement for your mat. Just walk around your play area and take note of where your avatar starts to dissolve.
I had a 4x6 foam jigsaw mat (black) that was the exact size of the YSFE area. However, I don't know if the size of the area changes depending on how high kinect is placed.
Unfortunately, that mat seemed to cause a lot of reflection/interference with Kinect (showed up as a rectangle of static/snow/interference in Kincect tuner). I think it was causing problems with YSFE and other games being able to track me.
I just got a 3x6 black vinyl tri-fold mat that shows up as a dark rectangle in Kinect Tuner (which I interpret as better than the static). I just got it yesterday, and have only used it once (with another game). However, I did notice an improvement in the game tracking me compared with the foam mat.

also, place your mat down before you turn on your Kinect.
If it's there before, it will ignore it. If you add it after the game has recognized you it might try and track it and screw up your results.
When the Kinect turns on it scans the environment to see what it needs to track and what it doesn't. When you add stuff mid go, it thinks it needs to track it.
For example:
I move my couch to work out. (I don't need to but I like to) If the couch starts in the play space before the game is on, the Kinect ignores it. But when I move the couch back into the play space once the game is going the Kinect tries to track the couch.
My couch is unable to stay in sync with the trainer so it wrecks my score.
