Both the personal training and games sessions freeze about 5 minutes in. On the personal trainer, the timer keeps ticking and the kinect still senses, but the trainer is frozen and never comes out of it. On the games session it just freezes and goes to a white screen. The fitness classes work for the most part, however the background music completely shuts off after the first session.
I recently downloaded NYNY, Bollywood and the Platinum Cardio Kickboxing. Not sure if this has something to do with it or not.
Also, noticed more noise from the console.

Sounds like a disc problem. I've downloaded NYNY and Cardio Platinum and haven't had any of the issues you describe.
Any other games have this issue that you play on it (to rule out bad optic drive in the xbox).

EnWhy, If your problems started with the new DLC perhaps it would help to delete the download and download it again. Your won't be charged again; Xbox live will remember your purchase. Sometimes downloads get corrupt.
Otherwise, I haven't had any of these problems with YSFE but I did have similar ones with EA Sports Active 2. Here are the things I did that helped. 1) As Alnark suggested, install the game onto your XBox harddrive. This could help with the freezes and will definitely cut down on the noise of the disc spinning. Be sure the disc is clean before the install. 2) Turn off notifications on the Xbox. I noticed that I was much more likely to have a freeze up during the time of day when friends were popping in and out. Turning off the notifications took care of the problem. It also turns of notification of your achievements in the games but you will still receive the achievements.
