You might have your Kinect sensor up too high. I have been reading some other forums about this issue (feet being cut off) and it seems to be a common Kinnect problem regardless of the game being played. The common factor seems to be people who are 6 feet or taller.
Some tips that have worked for other people include. Lowering the Kinect sensor, raising the Kinect sensor, moving back further to play, re-calibrating and changing the lighting.
My husband is 6'1" and he does not seem to have this problem. We have our Kinect set 5 feet up off the ground and we play about 8 to 9 feet back.

we also are having problems *ONLY* with lunges. everything else works perfectly, including player quantity selection and all exercises we've done. however with lunges both me (6'10") and my wife (5'6") consistently get 10% or less on lunges (other exercises we have no problem getting 100% -- only lunges).
this is hugely frustrating.
i have no idea what data is not matching for the game to recognize we're doing lunges successfully, we've tried doing them early, late, exaggerated, moving back, forward, moving the kinect sensor above the TV and below (with the concomitant connect calibrations after we move it), no change.
both the forward lunge and the side lunge yield this problem.
this is enormously frustrating and is enough of a detractor for me to not recommend this game to anyone unless it gets fixed. (which i am remiss about, as everything else in the game is great).

I've posted this elsewhere, and you may have already tried, but...
I found that the Kinect is not watching the lunging leg as much as the non-lunging leg.
For the front lunge I lower my knee on the non-lunging leg as close to the floor as possible, but as I return to an upright position I make sure that the non-lunging leg is as straight as possible; I almost attempt to lock out the knee to ensure this happens. Obviously make sure your arms remain out to the front the whole time too.
For the side lunge I actually point my lunging leg to the side, rather than slightly towards the front, and with my hands on my hips I make sure that my other leg remains straight during the whole motion.
Basically, it seems to all be about the non-lunging leg and how straight it is. I used to get terrible scores on lunges, but now I get pretty much 100% most of the time.
