Could it be that the red ensign you saw was the norwegian flag? It's not easy to spot the difference; in a distance the norwegian flag looks completely red in game.

You cannot tell British Warships from Canadian Warships, they use the exact same flag and have the exact same ships. (Though the Brits have more kinds.)

The current Canadian Flag looks nothing like the WWII versions.

I have this penchant for using the exterior view to watch torpedo strikes and ship sinkings. I get an up close and personal view of the ship, its flag, etc.

The two DDs I mentioned were flying the same flag that Brit merchants use ingame, the Red Ensign. I could not see any difference between the flags they were flying, and those the Brit merchants do (even as close as you can get with external view). If I encounter it again, I'll be sure to take screenshots.
