As for first step try:
-Opening up existing farcry maps (farcry\levels\ folder) and perhaps check out 'DEMO' or a MP map.. have a fly around and look at stuff, see how the levels fit together.
- Next learn to create terrain and surface textures.. the tutorials at 3dbuzz are good:

Once you have made or are making your basic island, open up the sandbox manual and read through it, it contains all the information you need to produce either a singleplayer or multiplayer map.

I think you are seeing that because you havent clicked on generate textures? Which is either under file or edit...

ahhh sorry Fal (and Cuz :P) I forgot you had to sign up to get those videos - i'd say it's well worth it though. They don't go into much detail but if you are having problems getting started, they can help.
As for the 'replace me' red squares - if you have chosen textures you need to hit file--generate surface textures.
All this is in the manualPage 6 (it discusses your problem straight off the bat)
