I just cut and pasted this from another topic and hope that it can help one or two of you out there. It seems to be a common issue. I discovered this out of frustration but it seems to work. If someone can tell me how to PERMANENTLY SAVE a recalibration that would be AWESOME 
If you are having trouble with the camera cutting off your feet or arms it will be effecting your performance in virtual smash and other areas in the game. You may even be getting low scores in cardio etc beacuse of this. It's not because you are tall or short. Try this;
Make sure your lighting is good and you don't have a crazy amount of glare coming in your windows.
From anywhere in the game re-calibrate by pushing Y on your controller. When you are being veiwed (in green) by the camera, hold your ARMS STRAIGHT UP. Don't press continue until you see the dots (connected by anatomical lines) on your FEET AND HANDS. This seems to create a maximum range for the camera to see your body.
You may or may not have to tilt the camera up or down (NOT manually!) There is an option in the calibration menu to do this. If you get the message that the camera can not see your head, hit "re-try" and move your head a bit - it should pick up.
