So I pause the game and then I see activity selection change player and resume, how do I get to the uplay register screen..?

Pause the game again (left hand at 45 degree angle) until it brings you to screen where you see "Kinect Guide" in the circle to the right. Cycle through the menu until you see the Uplay option.
