I wouldn't say HIGHLY inaccurate, but I agree with you. Samurai armor was typically leather or metal scales bound with either rivets, braided silk, leather, or some combination thereof. Animal pelts were not common. However, you could argue that Ubisoft has deviated from "realism" over the years (I mean, come on, look at some of the executions and effects). Also, it gets freakin cold in many parts of Japan in the winter, with lots of snow, so it is possible that even though animal skins were not actually part of Samurai armor, that perhaps a Samurai would wear some just to keep warm. (That last statement is based on a fictional scenario, not actual history, I don't actually know how common animal skins were in Japanese culture, let alone specifically among Samurai warriors).
Ultimately, I agree with Azulra_1, the game should stay true to history and keep animal skins out of the armor designs for Samurai. Leave that to the Vikings.
