At least I have the books. I absolutely fell in love with Aya in the book. She has a lot of depth, and her motivations and aspirations are very clear in it. I hope you're wrong about that. Kassandra is the canonical bearer of the Eagle and I hope to see her in future games. She is a very important character due to the time she lived to be simply discarded. If there was no reason to use her, I don't see why she would have lived 2500 years (The Odyssey writers could have hidden the Trismegistus' Staff in some part of the submerged cave for Layla to find). Regarding Eivor, due to this peculiarity of being a no defined sex character, I believe that this will greatly disrupt the character's plot. Since the name is female, he / she (this is strange) should be a female character. If it is to put two characters in the story I am in favor of following the Origins model (Two different characters, with different and fixed but complementary stories, something like Amunet and Bayek).

They weren’t well received because they were written and acted awfully. Aya was awful in Origins, just an unlikable character and really just an excuse to have some sea battles. Evie was equally arrogant and annoying. Basically it was a case of - why would you want to spend time in the company of these unlikable characters? They looked especially bad against the much stronger and more charming and easy going male counterparts, although Jacob was a bit annoying Bayek was charming and likable all the way up till the DLC that stripped him of his honor.
Ubisoft suffer from writers who are just out of the loop and try too hard with their dialog. It’s like the pain of watchdogs where the whole series feels like it’s been written by “cool parents”, or maybe coked out interns. You cringe every time someone drops an embarrassingly awkward attempt at being with it line. The same holds true for how they write women. It’s like “wait, no woman talks like that”, Kassandra worked because for once they didn’t write “woman”, the actress had charm and charisma and wit and was allowed to do her stuff.
It’s entirely possible that Eivor will also benefit from it being a this way, as it can overcome the tremendous drag factor of Ubisoft’s dialog writing team. So maybe this will actually make playing female Eivor much better than it would be otherwise, although whether it dilutes male Eivor remains to be seen. I don’t get why they can’t have a woman who, you know, acts like a normal person, naughty dog and rockstar manage it. At least half of TV shows manage it, though they also have a tendency to talk down to their audience. Ubisoft should step up and write a great female lead in a game, just as an exercise in understanding charm wit and what makes characters appealing not just visually but emotionally.
I liked Aya more than Bayek and Evie far more than Jacob. Aya also can't really be judged fairly since she had less than an hour of the game while Bayek had dozens for them to be developed. Agree that the DLC ruined Bayek, though he was only ever just okay in my opinion. That would be a plausible solution but I don't know if it would be good for the story, because for some people you would have Alexios participating in the plot of the future games while for others you would have Kassandra in the story. .. But what if the person had not played any previous game in the series? Who would appear in the cutscene? Kassandra or Alexios? Regarding the reason why they would not be able to identify Eivor's sex, I bet it would be because of a damaged DNA sample, in which it would not be possible to identify the last pair of (sex) chromosomes in Animus.

To use an example, KOTOR 2 did that with some events of the first game being discussed, including Revan’s gender, and the game reacted accordingly.
Syndicate was interesting as I went in not sure how I would like being forced to play as Evie and by the half way point I was like "Man do I have to play as Jacob again?" Jacob was the worst protagonist in the series, basically a caricature of what someone thought an Alpha Male should be .....
