AC games are known for their strong protagonists. Beyond any doubt, if you make a poll to ask people which hero of AC game was their favorite, Ezio will get the most votes. Why? Because he's charismatic, strong, fair, at times funny. Overall, a very well-written character.
And now we come to Eivor. Because you can switch and play either male or female Eivor (with both having the same lines, I believe), this severely limits the writers in what they can do. Easy example. Would Ezio work as a woman with the same lines? Most certainly not.
Don't get me wrong, I am all for being able to play as a woman. But this needs to be implemented properly. Make a game with a strong female lead (no male option) and write that character properly. People will love her. But because Valhalla's protagonist is basically a genderless blob, they will never beat the well-written protagonists of the previous games.
What gets compromised is the flow of dialog and sense of multiple people in a room rather than stilted line and response. That’s just down to how the dialog gets recorded when you have multiple protagonist options.
You also remove free will of the characters in the game. Their lack of choice becomes more apparent when everything uses neutral genders within the dialog and their responses are to a generic character model. Believable interaction between characters is the thing that gets hurt the most.
A good actor or actress can overcome to an extent as you can see with Kassandra, but Bayek’s scenes flowed much better and the animators and actors could deliver more nuance. Having said that Kassandras character itself was maybe helped by being neutral as it avoided the sexist trope “riddled with insecurity try hard girl” that Ubisoft normally write for their lead women.

Personally, I think it's all about the approach.
Odyssey was kind of strange in that you have Alexios and Kassandra, as well as Deimos and the Eagle Bearer. Then, you end up with some combination of those two groups as two separate characters in your story. So not only is your own character of your choosing, but in a way your enemy is as well.
With Eivor, as far as we know there isn't really that complication. Eivor is either presented as a male or a female. I think the actors' deliveries is going to impact how lines land more than their gender.
