nothing's changed. Don't spam attacks (he has HA) and time your charged heavies. Practice dodging faster kick, with the slower one.. better to just back-step light attack. Getting grabbed is more costly. Learn to dodge his unblockable, it's free grab for you. Don't parry simple heavies, like you, he can delay them.
Spamming attacks against Hitokiri is a fastest way to eat his fully charged heavies.

oh, wait. you were AGAINST centurion?wtf he's one of the easiest heroes to beat. He has almost no offence, no proper OOS pressure, his bashes are easy to dodge.
if he was parrying and grabbing you left and right that means you were spamming obvious attacks. You didnt delay your heavies as Hitokiri, didnt feint, and you used light attacks too often.
Okay, here is the easy list:
1. Block his lights and heavies. Don't bother parrying, he can not do a thing this way. Unless you have a very good optionselect. The unblockable heavy is still a reaction parry since unfeintable.
2. If he goes for any jabs after a blocked heavy, you get a free gb. Kicks give you a free gb if he doesn't follow them up.
3. Don't use heavy into GB mixups.
4. Avoid walls, especially behind you.
If you follow these, it should not be a problem to beat any centurion, good or bad.
Hitokiri specific stuff: utilize your hyperarmored charged heavy mixups as much as possible. Try to condition them to parry on a different timing. Don't be shy on throwing some lights, he gets the same damage on heavies and lights. Don't commit to the kick mixup with walls nearby. If you follow these, you have more damage, more health and working mixups, against his nothing.

There is no shame admitting you lose to a centurion here and there, happens to all of us sometimes. However, it is clearly your fault with almost every hero, killing them is not really a fight, it is a technical thing. I wrote down all the steps for that. You have the option to take them and adapt, or you can also keep losing to centurions.
