Leaning controls
Hello!
As you know, when you lean forward your rider stays leaned forward until you lean back. Same with leaning back, your rider stays back until you lean forward.
So in a way, the controls are in "toggle" mode. This is very unintuitive and difficult for me to get used to. There are stunts I feel like I should be able to perform but I am unable to due to these controls (I know, get good).
Is there a way to make the controls hold-to-lean? As in make the rider lean forward only when I hold forward and go back as soon as I release the button.
If such an option is not present ingame I'll leave this as a feedback.

It already sort of is.
If you just tap forward the rider will lean forward, moving the center of gravity accordingly but.
If you hold the lean it will continually apply force. This is how riders can climb vertical walls for example.

This would probably not work as well as you imagine. As Zulatomten said, there is a difference between positioning the rider in a forward or backward posture and releasing the stick, and holding the stick in a direction. Holding the stick applies a continuous rotational force, but there are many situations where you will want to adjust the rider's weight forward or backward on the bike, but return the stick to neutral so that you are not continuously rotating.
What I did a lot when I was new to the games, and what I think is the best way for new players to get their head around the controls, is to simply watch a bunch of replays. Watch top players, mid tier players, players who are only slightly better than your time, and just get a feel for how to manipulate the bike and what a good smooth run should look like.
