The only thing that we currently have in the game that's comparable to that is nobushi's retreat. Where you have to press your dodge button right as you get hit. It's weaknesses is tracking really.
In this case his weakness would be guard break. As it takes about 250ms? To get into the block. During this time you could theoretically guard break him. You'd just have to throw the GB after your attack before he attempts to do so. But I think the timing on that might be too tight. So instead you have to look at why he'd be doing this. Most likely answer is to try and do a bullwark counter on your follow up. That particular move is basically parrying but in full block stance. Meaning he can whiff it by inputting it wrong. It does have a sizable recovery on whiffing. So rather than trying to GB him on entering bullwark you'd likely try to bait him once he's in it and get the GB on his whiff.
