I couldnt have said it better myself I literally just got the game and am faced with the same dilemma of others here. Then now I echo your sentiment, funny thing is I have supported Ubi for a very long time with alot of their products, but no longer... If enough of us take a stand like this one they may one day listen, when theres no one else to snag cash from, laugh all the way to the bank, and leave a project unfinished with its game breaking bugs. I tried most of the work-arounds here, and nothing worked for me. What was happening was that whenever the enemies moved, the game crashed. So I finally found a work-around that worked for me: I came back to this challenge when I was a bit higher leveled. I killed one of the enemies with one hit, and the other one I crit with a honey weapon, so that they couldn't move. I then failed the challenge, and when I re-started the challenge, it stopped crashing.
Some iteration of failing the challenge and re-starting to work-around the bug has been floated in other posts on this thread. This ^ was the work around that finally worked for me.
Just wanted to throw that out there for anybody else who was stuck on this bug.

If you first either move Mario or perform a Dash attack before using the primary weapon, the game no longer crashes.

Crashing wouldn't really be a problem with the Switch in the first place anyway.
Crashing usually happens because of an internal error in the game. Whether it couldn't load data because it didn't exist/was corrupted or something broke.
I had Kingdom Battle crash on me once but that's all. It's not a common occurrence but it def can happen. If you have the game digitally and the game keeps crashing in the same spot then try reinstalling the game/using the check for corrupt data option
