One Hell of a Defense Show!
Oh that could make for some awesome situation for sure.

Now, stupid question, how do you trigger Unidad patrol after you clear the place from SB thugs? do you wait for them to pass by or you go looking for trouble and drive back,

Easy Way is to wait for Chopper Patrols flying above the Chapel. Or shoot a Flare while cleaning the SB Guys. Shouldn't take too long for a Unidad Patrol to arrive.
Let them see you, raise Alert Level and enjoy the Fight.

IIf I want to mess about I will usually attack on a tractor and run over as many enemies as I can. Either that or just fly around in a plane, testing what gaps I can get it through.

Going loud can be fun too at times, too though.

I often go loud. I mean yes stealth can certainly be fun but getting into big firefights going loud can be just as fun. My standard setting on ghost mode is usually Advanced and its a good difficulty to play at going loud in my opinion

Well, wouldn't you believe it, turned the xmas lights on again, blocked entrance and add proximity mines to it for good measure, start to pick out s/b thugs one by one, my rebel lookout missed a couple of baddies (just my luck) so the whole place is on fire now and we have to go loud prematurely (it has happened in real life before as well I must admit ), an Unidad Helo shows up and I am ready for it, dropped it down with one of the short LMGs, sorry I am very bad with weapon names and I am done? WTH !!!, really???? when I try to my best to be stealth and something blows in my face the whole Bolivian Army is on my butt like stink on, well, ok, you know... and now that I want them to come they decide to call it quits? What gives!

I'll try it again another time I guess.

I feel your Pain. Sometimes it's impossible to start a War, just because those Unidad Basterds dont want to join the Party. And if you don't want them to take part they'll arrive in Dozens for sure
However, it's important that they can see you several times. Don't kill da Chopper. Raise Alert Level first.

I forgot one thing: Don't use Rebel Reinforcements. Due to that STILL EXISTING Vehicle DMG Bug they blow up every incoming Enemy in no time.
