There's a loop hole in the Right-hand man challenge. You can play the mission normally, without the restrictions of the challenge, then once you grab Wagner at the end, fly him to the challenge rally point first to complete the first part of the challenge, then take him to the extraction point to complete the final part of the challenge.

For the mortar challenge, the best place is a gas station in Montuyoc just east of Bravo rally point. 5 Sicarios are always standing together near SB vehicles. A perfect fire and forget target area.
