Ok so easy fix and here are the steps there are only like 6 or so edits yes only 6 or so HEX edits you need to make with this program and credit for easy instructions go to susahamat @ WSGF website……….
1.... get HxD hex edit … https://mh-nexus.de/en/downloads.php?product=HxD20
2..... Open Program HxD > Click File and Open ACOdyssey.exe
3...... Ctrl+F > Click "Hex Values" > Click Search Direction "All" > Write 39 8E E3 3F
4..... change EVERY Instance and Replace Value With Hex Your Aspect Ratio Res , Here are the list...….
2560x1080 = 26 B4 17 40
3440x1440 = 8E E3 18 40
3840x1080 = 39 8E 63 40

The reason I believe the devs often block FOV in games is that many cutscenes only look good when displayed at a certain angle. Cutscenes are often smoke and mirrors with characters appearing / disappearing outside the field of view. So in order to avoid players seeing this happen, developers normally spawn / despawn characters or trigger / stop animations outside player's FOV. In order for games to support 21:9 resolution natively, all the cutscenes must be made with this in mind (which is not the case for Odyssey as throughout the whole game I've seen characters despawn with unlocked FOV 2 or 3 times). So I guess I'm glad they tested their cutscenes, fixed them and unlocked 21:9 in cutscenes.
