It was extremely difficult and there were a ton of mistakes... but my friend and I managed to clear what is arguably the 2nd most difficult track in the beta with the Tandem bike.

Wow, I am impressed you cleared the jump after the second checkpoint. I played some of the tandem tracks with my brother and a lot of them are really hard. I think the only hard course we cleared was Valley of Kings.
