The "on the edge" race bugged out 3/4th the way through the level and people recommended to remove "CacheStorage" from My Documents\Trials World Tour\SavedGames\

After that the game was stuck on 5:3 aspect ration and the game doesn't allow you to change it what so ever. Pointless to change resolutions when you only have 2 options and both are too small to use. Reinstalling and verifying cache does not help, same thing happens.

Do I need to change aspect ration inside the files, if so where can I do that?

Did you try to edit "local_config.xml"? It's also in the "SavedGames" Folder. There's a line called "Window" which holds your currently configured resolution.
