Hey Nelmaster! Can you please try verifying files (Uplay, Steam)? If that doesn't help, can you create a ticket so we can investigate.
I know this is an old thread, but I am having the same issue as Nelmaster. Every time I exit my game, all of my settings reset back to default, and it makes it impossible for me to update some graphics settings since they require the game to be restarted. I have already tried verifying the files on Uplay, I have tried running the game as an administrator, but nothing works.
I am having that same issue: I have to re-input my video and keyboard/mouse settings every time I start the game.
Below is what I get:

File path does not go to FarCry5.exe, it goes to ArcadeEditor64.exe.
C:\Program Files (x86)\Steam\steamapps\common\FarCry5\bin\ArcadeEdi tor64.exe
Also, when I try to look at the ArcadeEditor64.exe.CONFIG FILE (???), it opens an entirely different program - does NOT open the CONFIG file.
I have tried to change the path to FarCry5.exe. Windows will not let me change it.
I'm thinking I have to uninstall/reinstall, but I'd hate to lose all the progress I've made so far.
Another note: I am unable to quit/restart the mission I'm on anymore. It worked for about half the time I've played (40.4 hours so far); doesn't now.

Sorry to hear that you are both experiencing this issue. You can find the save locations below:
PC (Ubisoft Connect)
C:\Program Files (x86)\Ubisoft\Ubisoft Game Launcher\savegames\<Unique ID>\1803
PC (Steam)
C:\Program Files (x86)\Ubisoft\Ubisoft Game Launcher\savegames\<Unique ID>\4311
You can try the following to save your game files as backups:
Locate the Ubisoft Connect PC icon on your Desktop.
Right-click on the icon and choose Open file location.
This will open the Ubisoft Connect PC installation directory. Locate the savegames folder.
Right-click on the folder and select Copy.
You can now right click anywhere e.g. on your Desktop and choose Paste to create a manual backup.
Once done please try reinstalling the game and seeing if the same issue happens.
If it does please restore your saves and get back in touch.
