You have hyperarmour when you activate it (results in an automatic parry) and when you are in an attack animation.

I see people that can just go ham with it and then there is me throwing out a move just to get hit and the attack cancelled it just doesn't feel consistent to me

Well, sometimes lag is a factor, but over all as long as you are attacking you should not get affected by incoming attacks.
