Unlimited Scores
I asked this on the Ubisoft Support page, but they said they cannot answer gameplay related questions, so I'm posting it here.
Are the scores from the Unlimited service suppose to transfer from a previous game to this game? If they are, then I've only had a few scores transferred, not all scores.

What, exactly, do you mean by "transfer"? I completed all of the Unlimited dances in Just Dance 2017 (which had been available before Just Dance 2018 came out), and I am able to see my scores on all Unlimited songs by toggling through the leaderboard in Just Dance mode. I see my scores for the Just Dance 2017 dances this way, too. (Well, the leaderboard feature wasn't available until after I had danced to 5 songs in Just Dance 2018, but since then I've been able to see my Unlimited scores by toggling through the leaderboard.)
But I don't see stars next to each song as I scroll through the Unlimited dances, and I don't see any local hi scores for the Unlimited dances -- except for the few Unlimited dances that I've done in Just Dance 2018. (There is one exception that shows stars and a local hi score even though I haven't tried it in Just Dance 2018 yet -- I had done it only in Just Dance 2017. Why that one is different, I'm not sure.)
If you had done the dances prior to Just Dance 2017, I'm not sure if they will transfer.

By transfer, I pretty much mean what you said where the scores you earn on 2017 (and I guess 2016 as well) are also present in 2018.
I am also able to see my Unlimited scores through the leader board, but when I scroll through the menu, those scores are not above the song's titles. In fact, there are no scores posted as if I've never played them before, almost as if it counts this profile for 2018 a different profile from the one in 2017. There are a few exceptions. All of the Unlimited songs that were "Kids" songs (Alphabet Song, We Go Well Together, etc) all have my score from 2017 on here, and the songs "Je sais pas danser" also has my 2017 score onto here.

It's exactly the same with me. I see my stars and local score on Je Said Pas Danser and on the 2017 kids' dances (I hadn't noticed it showing on those kids' dances before today).
It's strange that it shows for a few dances: Why not all or none? I wonder if the new score of Super has anything to do with the score transfer... When I did these dances in 2017, there wasn't a Super. When I tried Hips Don't Lie through Unlimited with 2018, I hit a few supers, and my overall score was a little lower than usual.

I believe only those scores transferred because it has something to do with them not being added in 2018 initially on its release day. I definitely remember not seeing Je Sais Pas Danser show up the moment I got the game (I'm pretty sure it was added within the first week of the game, maybe like the second or third) and unlocked Unlimited, and it was only recently that the Kids songs were added.
I thought the Super was going to increase my chances of getting better scores for songs I struggle getting really good scores on like Aquarius and Applause, but it doesn't. (I even looked at the high scores for Aquarius, and the highest was 13,068 which is considerable low for the 13,333 limit songs have. Even seeing videos of people getting all Perfects with their phone the scores do not reach close to 13,333) It kinda just replaced the times I would get a certain rating on that song in a previous game, kinda like if I got a Good in the last game I would get a Super in this one, and my scores would still be equal to the ones from 2017. I honestly assumed this was cause they were released in 2014, and that was the first game that was available on the Xbox One so their detection wasn't as on point as it is now. (This probably explains why most of the songs I have a hard time on come from 2014. There are only a few exceptions to it like with TiK ToK and She's Got Me Dancing)

This is a good question. I'll see if we can find out anything for you.

Since Je Sais Pas Danser and the 2017 kids dances show our 2017 and Unlimited scores as local scores, it's clear that all of the songs "could" do this, too. I wish they would. It makes it so much easier for me to see when a new song has been added to Unlimited when I have stars showing next to all of the old songs.
I was also hoping that Super would help with the hard songs. If it had, that would help bridge some of the disparity during Happy Hour that occurs with cross-network play (for example, I hit 12000 easily on Aquarius using my phone or a Wii remote, but it was one of the toughest dances for me to hit 11000 on with the Kinect sensor; whereas Circus Extreme was much harder to learn with a phone or Wii remote than with the Kinect Sensor).
I suspect that Super was introduced for another reason. In 2017, I observed that not all Perfects were created equal. For example, a few times I had all Perfects at the beginning of a Video Challenge, but was losing to someone (on a solo dance) who had made a couple of Goods. Evidently, my Perfects weren't quite as Perfect. Similarly, I had hit all Perfects on Bang, yet didn't even clear 13,000, whereas I could make a couple of mistakes on other dances and hit 13,200. So maybe Super will help identify places for improvement that otherwise would have been scored Perfect?
Most of the 2014 dances are very demanding with the Kinect sensor (though there are a few exceptions like Don't You Worry Child which may be too easy). They were a bit frustrating to learn at times, but looking back, I learned a LOT about choreography from forcing myself to learn all of the 2014 dances.

For me it's a gamble to play Unlimited songs right now because who's to say that it won't happen again? Then that's another load of songs you do just to have them say scores on another game.
I have a feeling that DLC songs from 2014 weren't really affected as they were released after the game. I'm guessing by then they got the hang of detection because a lot of the 2014 songs I have issues with come from the main tracklist and not DLC. (I think only 1 comes from DLC, but that is an exception)
I currently have tried a lot of times to MegaStar Aquarius with a sensor and I have not gotten it. I saw a video of someone getting it with a sensor, but it looked liked it came from a PS4 (there were 4 slots) so I honestly think it's an Xbox One thing. (That person was getting Perfects non-stop while I was getting random critiques during the same parts. I honestly never feel a really good guarantee that I'm going to get good critiques during any part of the dance tbh because of its mixed signals)
