For me it's not even launching on Monitor 1.... OR 2.
I have a little tv that I use for the clock/word documents.
I have a TV I have my PS4 hooked up to that is a backup monitor for anime and such but it keeps redirecting to it instead of my main monitor
Monitor 1 (HDMI) Small tv.
Monitor 2 (DVI) Main screen Acer Monitor
Monitor 3 (Display Port) Samsung which is the one it's going to.
In all of my settings the main display monitor #2.
Origins is the first game I've had this issue with.

I know it's a bit late but I've just experienced the same issue with AC Odyssey launching on the wrong monitor every time.
I fixed it by editing the .ini file of the game. Go to your Documents, open the Assassin's Creed Odyssey folder (or in your case Assassin's Creed Origins), you should see a .ini file called ACOdyssey (or ACOrigins.ini). Right-clic on it, go to properties. You will see that the file is in 'Read Only state. Uncheck Read only and apply changes. Now open the .ini file with notepad (or notepad++ or whatever you have) and go to the line 'DisplayIndex' and change the value according to the number of your monitor (I have two monitors, the game was launching on 1 which was the wrong screen, I set the value to 0, it worked) and apply. Next time you will launch the game, it should display on the right screen. It's good to know that you can edit a lot of values with this file, not just the display.

Thanks man, it worked. In my case I was seeing the native resolution of my "wrong" screen in the .ini file. I just changed it from "0" to "1" and it played in the "good" screen, I later opened the .ini file and the resolution had been automatically changed to the "good" screen native resolution.
Strange thing is, this is the second time I am playing it (this time on hard) and this have never happened before. It happened all of a sudden and with no apparent reason (Windows update, etc.)...
