Oh heck, I just searched up the Swiss Army Knife on Google and that's not what I meant, hahaha. I meant a Bowie Hunting Knife. Get those names mixed up.
To explain the reason why the player doesn't use that knife I would say he just doesn't, idk man, player uses it strictly for skinning and harvesting, don't want human blood on it?

If they have decided to get rid of the looting/skinning/harvesting animations I can say that I will be the first one to thank them for it... there was nothing more excruciating in FC3 & 4 than having to grind and then submit to the animation as well and to me personally, had nothing to do with immersing myself in the game. Now, if they would have given us a few different combination of each animation then ok, I would be saying something different.
I rather they kick that part to the side and use that time to work on better gameplay, weapons mechanics or giving us a better AI.

Would you much rather prefer spawning in and out of cars because the animation is too long and boring? No! Of course not, that's lazy and unrealistic. I know for sure that spawning in and out of cars in real life is impossible. Unless you were to know something we don't.
Immersion is basically when you feel the game is real. Not literally feel that you are in Montana or the Himalayas. But to an extent that you feel that the game could very well be a real life scenario.
Magically obtaining an animal skin or having leaves in your sack just aren't real life physics. Same with spawning in and out of cars. I see no difference in importance between the two.
