If you are absolutely sure about this and you're saying people can condition themselves to PARRYING all valks light attacks without cheating, I'm glad i forsake this game, I will never be at that level.
It's been a few days since I stopped playing and I feel the occasional urge to reinstall the game and get some fuel going, but then I remember why I quit in the first place, all the abusive moves and insta detah scenarios, all the rage I was building up in me in the course of a game, even when winning. I love this game, but I also hate it whit a passion. Time to let go.

If you feel like you want to take break, just do it, but maybe check the playerbase on steamcharts regulary and with some hope, in a year or so It might be way better.
Or take a small break of a few days/ a week and start a different approach by learning a few mechanics and asking the com for help to get better. Winning games makes For Honor less frustrating, and it is easier to deal with the regular bs we have to deal. Like i said, i am a potatoe, but i am fine with Valky.

This might be too little too late but FWIW I too have felt the frustration that this game offers up in the bucket load. Also, I too am an older than the average gamer that has questioned if my reaction time can keep up with the kids. So take heart, you're not the only one. So if you do come back to the game sooner rather than later here are some tips that I've learnt that may help. And please don't think that I'm assuming you don't know this stuff. I'm just mentioning a few things that have helped me, not only get a little bit better with Valk, but enjoy the game despite the frustrations.
Valk vs higher level opponents is a challenging hero to get wins with. IMHO she is mid tier at best in higher level matches. But if you concentrate on practicing how to open up parrying turtles you can turn the game into a puzzle that needs to be solved rather than just a biff and bash. And that shift in mindset might take the sting out of the losses. At least it has for me.
Try heavy feinting into light attacks, or into GB or back into heavies. Shoulder bash into heavy, or GB, or light attack or heavy feint into, etc etc. Try to open them up with mind games rather than brute force, of which Valk has little.
FWIW an LB that can parry but never attacks is a pretty hard nut to crack but it can be done. Practice the hunter's strike to avoid the shove and punish with a light attack.
If you condition them (even on pain of death) to expect a light, you'd be surprised just how many times you land a heavy.
If your opponent is fully committed to parrying then feinting works wonders. Again, it's surprising how many heavies land if you condition them by spamming heavy feints.
After a parry you CAN get a guaranteed GB if you dash forward first then GB but the dash needs to happen immediately. As far as I know this is on all parries except on most Nobushi light parries - in which case use the pouncing thrust. It will catch her before she can recover. I'm not sure but maybe even a zone attack with reach her.
Keep practicing against Ocochis. Their fast attacks can be frustrating. But for me it's more about predicting rather than reacting. And this just take practice. Even the best players get constantly hit by Orochi's zone attack and top lights.
As to commands not responding, I too have had this problem, normally because I'm tense and therefore hammering at my keyboard and mouse rather than lightly and calmly tapping the inputs. This comes with a level of zen of which I admit I'm still far from mastering.
Take a break from multiplayer and practice against bots in Dominion and Elimination. I actually find this quite fun without the added pressure of letting your teammates down.
