If I activate a game in the US, with a key meant to be activated in the US, will I be able to play the game anywhere else in the world or I'll have to be on a US IP address constantly?

I don't think you should have any issues traveling and playing as it logs into your Steam account, before you play. So as long as you have all your games installed already there is no issues. It's when you try and buy one outside the US and then come home and try to play it here, with the region lock.
