I am a rep 10 orochi so I have experience. Unfortunately I totally suck at blocking light attacks. I'm trying to understand what is wrong with me (other than being slow as a snail).
I have troubles blocking the lights from the bots in training which is just WTF.
So guys, please, how do you do that all of the time. Do you observe the character's moves and start from there even before the indicator is displayed? I'm trying to do that but I find it that in the middle of the fight I just mess up. Being an orochi, I find it considerably easier to dodge than to block which is quite confusing since in my mind it shouldn't be the case.

In that case i would hold on to one of the two so you get good at that. Mixing it to often will only hold you back. I'm not sure how the controller plays with this game, I've heard mixed reviews about that.
Try to do a private match with a friend and make him spam lights from all angles on a pk (she's the fastest so if you can block that you can also block the rest). It's a good way to get a feel for the timing.
Blocking is easier on controller because you don't have to think about direction. I had to tweak guard sensitivity for mouse to lower the amount of chaotic guard movement.
But I found keyboard overall better then controller because of the keys accessibility. Like GB which is just easier...especially when you have mouse with buttons on the side.
If you have patients you may try Steam Controller because it has more options like dual triggers. Or Razer Raiju that has more buttons but that one is expensive.
Light attacks are fast so there are only two solutions:
1. Practice to make your reflexes better. Also with corelation to your hand movement.
2. You may try to learn what each class can do. But if someone played this game for awhile then it won't matter because he will try different actions to break patterns.

So you memorized the body language of all of the characters than? That's impressive. I have heard people doing this but the block indicators are too distracting for me to pay too much attention. That being said, I played with a very good controller for a while. At first I dealt with the dead zones than I played using "Big Picture" to get rid of dead zones. In order to completely eliminate dead zones and not have any other problems. I drilled a hole in the top of a chapstick lid and inserted it around the analog stick. What it does is limits the movement the stick can make.which is amazing! It helps a lot with 2nd and 3rd blocks (but only the dead zone elimination helps with first blocks).
Big Picture in Steam stopped working for me after this last patch so I converted to keyboard mouse. Personally I have found that flicking the mouse is much much quicker for me than reacting with the analog stick. After switching to mouse at high sensitivity, I am blocking PK and Valk lights.
I kind of wish there was some sort of hysteresis on my mouse though because sometimes when I flick left, I end up with a right guard.
Well I usually load the Valk bot lv. 3 and do that... I didn't know that there is 0 dmg option... that would save some time. I started to pay more attention to the body language and it really got me better results. Now I have to start doing it for real and not only in practice.
As for the controller, I have the same opinion. It is so much slower to move the stick than the mouse. The travel of the stick is obviously much longer than the minimal move you need to do with the mouse in order to trigger the block.
I was just doing the same stuff the last day or so (valk bot lvl 3) . I play ps4 and main an LB so maybe light spam is really a lost cause, I dunno. I seem to do a little better watching the character. Also, im trying to parry the light attack.. Thats tough. The side to side blocking can be frustrating though, its always a split second behind. I think its cause of the recovery time from getting hit but im not 100% on that. Thought about hooking up to a comp monotor and try that, might help?
