Are you referring to the background color of his emblem or the symbol? When you select your background in the top left-most tab you can select 'background' and see options for style, color, sizing, position, etc.
He's probably talking about the building view, where you can't actually see you're finished product. If you hold L2 or R2 (can't remember which) it previews your colours so you can see what it'll actually look like.
