There are most likely different types of issues here.
If Nobushi does light attacks, just block. A single block messes up the chains. Depending on what character you play, a dodge does the job quite well.
Peacekeeprs and Orochis have a quite good matchuhp on Nobushi. If you are a Shugoki.. well... then you'll have a hard time with Nobushi in the beginning.
My advice: Go to custom matches against a nobushi bot lvl 3 and learn the moves. at first, only block. Later you can parry and counterattack / guardbreak.
Sometimes you gear is the reason. I for example had a blade that decreased defense quite heavily and I lost so many matches, that I changed to Lawbringer (a super defensive class) just to be alive longer. Later I put a defense blade on my character and waht can I say. The things I leaned while playing Lawbringer and the better defense do the trick now for me.
Edit: Before I forget. Try an Item with debuff resistance. That minimizes the bleed effects as well as stun recovery and many other things.
