For the free guard break after a parry, you have to input the guard break button as soon as the parry connects. If you time it right, your character will automatically dash forward and perform an uncounterable guard break. This doesn't work on the Nobushi, Shugoki or Kensei if they are attacking while walking backwards at max range, but on the rest of the cast it pretty much always works. Also, if said classes aren't at max range and walking backwards when you parry, it will work on them. Just practice the timing, it's pretty tight, gotta almost input the guard break right after the parry input.

The main idea is to get as close as possible to those 3 and keep some distance from the other characters because you either have a longer range than them or you want to get more time to react to a shoulder bash like skill.
Once you have gotten used to this, your parry->GB will feel a lot more reliable. You don't get anything from keeping your distance from these 3 anyway.
