What does this actually do? I normally go for Attack on my weapon, but what does the defence do?

?? i dont get your question. attack is boosting your damage per hit - defence boosts your defense per hit (i.e. receiving 100dmg from a hit, having 5% more defense on an item = receiving 95 damage)

Defense will improve how much damage is taken from a hit. If you have high defense then you take less damage from an attack that you don't block.

Block Damage effects how much damage you inflict with a heavy attack that is blocked and Block Damage Resistance effects how much damage you take when you block a heavy attack because even when you block a heavy attack you take damage to completely avoid that damage you have to Parry (I think shield wielding classes ignore all that damage not 100% sure though)
