Since my thread have not been replied to by you guys, I guess ill ask here

My break/acceleration is automatically going as soon as I start a map, making me "drift" as indicated in the bottom left of the screen with the drift meter.

I play on Windows 10 using keyboard, the only things I have plugged into my computer is mouse, keyboard and headset..
I have previously read that unplugging various gear would help, however, can't really unplug my keyboard when that's what I'm using to play, can I?

Have tried to unplug my mouse and headset, only having keyboard plugged in, the issue stays.

Be sure the firmware/drivers of your keyboard/mouse are up-to-date. Else i recommend you to contact the Ubisoft Support at http://support.ubi.com
