I think itd be great if they gave the Knights Vin Diesels voice and lines from his movies. On the shoulder charge he could say "A quarter mile at a time"

Haven't really heard the knights talk that much but everything I've heard so far was spoken in Latin.

However there are some sentences that seem not to be latin, but can't remember exactly which ones, tho.

It's not only latin according to a lot of people on Reddit. Knight's didnt even speak latin, only some did a bit because they were very linked to the church. They say they're speaking a mix of different languages. I don't speak latin myself though, i first thought they spoke that too but i want to be sure.

it's definitely latin, even the pronunciation of the peacekeeper is impecable
By the way do you think they were called "THE LEGION" for no reason? the knights are basically the roman equites descendants

All I can hear out is the Conqueror speaking "Überflieger" in german ... which makes no sense at all ^^
