How about the developers would start to showup here since its the official Eagle Flight Thread?
The Developers would also be welcomed to join Discussions at Reddit PSVR Forums like other Developers
giving back to people who bought your products and which are, as it seems, kinda upset with missing Updates and disturbing Features.
So if not here perhaps it would be nice to give back a bit official Feedback at Reddit.

I got interested in Eagle Flight, watched videos, saw that ugly black blinders, and because of the actual problems with Star Trek i came here being curious.
There is really no update till now?! There is no way to put in a simple on/off option for these blinders like on pc?!

As - obviously many - others, I wanted to be able to turn off the tunnel vision on rift version; I didn't find a solution in any forum, so I had to investigate for myself
there is no save game file, one could edit (as in the vive version); rather the savegame is hidden in the registry (!).
I therefore used regedit and went to
[HKEY_CURRENT_USER\Software\Ubisoft\Eagle Flight]
there you find a "XXXXXXXXXXXXX_SaveGame_XXXXXXXXXXXX" key, which supposedly is the savegame "file".
Edit this by searching for "blinders" and replace the following "true" with "false"; leave anything else untouched.
save and start game; at least worked for me.

So how is it now after 2 years the PSVR Comminuty ( As linked several times ) request removing the Blinders by Option for PSVR Users?
If there is one concern people have buying it and playing it on PSVR it is the annoying immersion breaking Blinders.
How should we trust in Ubisoft with anything new in 2019 in VR if you ignore the Playstation VR Community since 2 years?
I am speechless...
Again, please add a Menu function to remove the Blinders or by Controller Command.
