i would love that, reminds me of a game (for the life of me i can't remember which upsets me) where if you idled long enough after fighting you would swing your sword at an angle towards the ground to throw the blood off which would then cover the ground in a curved splatter

The attack hits seemed a little underwhelming which could be a sound design issues. Every time a hit comes away, as in when the blade is pulled back from a successful hit, could be an opportunity to see blood in the air. Additionally rolling through mud or being knocked to the floor could result in mud/dirt on your armor. The characters already look so gritty and heavy but if they don't interact with the environment and with each other in this way, it can break the immersion.
Also I noticed in some of the pre-alpha gameplay footage, bleeding cuts on the Viking raider. I didn't notice armor damage or wounds as much during the Alpha. I hope your battle damage is included in the final release.
