you can parry unblockable attacks. Very risky to do, y'know, incase you get hit, but very doable!

How does one do this? Perfect deflect with "Heavy" attack right as he hits you or? "Risky" he kept on doing it over and over again, seems like he practiced, tho the name is lying then "Unblockable" clearly its blockable... so either change the name to something else.

Blocking is one thing. It's holding the same guard direction as the attack.

Parrying is performing a heavy attack in the same direction as the incoming attack. This heavy attack must be performed at the moment of impact.

Some moves are unblockable, but all primary weapon strikes are parryable (except maybe the Orochi's heavy counter)
Conqueror shield bashes, raider grab and warden shoulder are not blockable or parryable, but they can be hit out of it. It also seems like they can be guard broken out of it, but it's less consistent... probably a timing thing.
